The ISS White Collection series is the brainchild of Stephanie Hamilton, Managing Director, ISS Food & Hospitality, and celebrates top level catering with a new selection of dishes published every season.

Autumn-inspired food was celebrated on 16 September, when ISS was joined by clients as well as H&C News, to discover the autumn creations.

Head chefs at ISS Food & Hospitality showcased and introduced some of their select creations which guests then sampled, with the dishes also photographed and bound into a beautifully produced book – the White Collection – which serves both to demonstrate their inspiration, and to remind clients of the excellence on offer.

Stephanie commented, “This season’s collection is a fantastic opportunity for our chefs to share their creative thoughts and ideas with our clients. It also allows our partners and clients to develop a deeper relationship with their food experience – and us – and to understand the inspiration behind our menus.”

Starring at The White Collection…

The White Collection Autumn tasting event included dishes from newly developed menu selections: there was no doubting the all round quality of what was being sampled (appreciative murmurs around the room), including Gavin Dunn’s butternut squash cornet, parmesan parfait, squash ice cream, nuts and seeds, shown above.

Stand-out dishes included:

  • Matthew Petit: seared aged Dexter beef with horseradish cream, onion crumb, smoked golden beetroot and artichoke crisp – delicious as it genuinely melted in the mouth.
  • Nick McGeown: wild mushroom consommé with fine herb gnocchi and confit tomato. Rich yet subtle flavours that left you wanting more.
  • Jack Godfrey: roasted loin of hogget, stuffed breast with aubergine caviar and savoy cabbage. The merits of hogget are still relatively unknown: not for long with dishes of this quality.

Illustrated below from the Collection are: Sam Pearce – winter fruit influenced Apple, Blackberry and Sloe Gin Cobbler; and David Pigram – Pheasant with Caramelised Endive.
