Ace Hotel London Shoreditch & Hoi Polloi have appointed Simom Gregory as new executive chef.
Simon joins the team at 100 Shoreditch High Street in August 2014 and will oversee kitchens throughout the hotel including Hoi Polloi, a modernist Brasserie run by the team behind Bistrotheque, and the newly opened 7th Floor private dining and event spaces.
He brings a wealth of experience to the hotel, having spent the last eleven years working for Gordon Ramsay Group, most recently as group executive chef (since April 2011). Simon comments:
