Chef/restaurateur Simon Rogan has announced two new key chef appointments in his team, effective immediately.
Mark Birchall, who has been Head Chef at L’Enclume since 2006, is taking on the new role as Chef Director of Simon’s restaurants (other than Fera at Claridge’s). These include his establishments in Cartmel, Cumbria (L’Enclume, Rogan & Co, Aulis, and the Pig & Whistle) and at The Midland Hotel in Manchester (The French, and Mr Cooper’s House & Garden).
Tom Barnes will take over the position of Head Chef at L’Enclume, where he was previously Sous Chef since 2011. Tom won the prestigious Roux Scholarship in April 2014, following in the footsteps of Mark Birchall, who won the award in 2011.
