Smoke is the ‘seasoning’ that is making inroads into all sorts of dishes and chefs, bartenders and home cooks are finding new and exciting ways to enjoy its unique flavours in sweet and savoury dishes and cocktails, whether it is used to impart just a subtle hint of smokiness or to play a major part in the flavouring of food and drink.
Cream Supplies’ new range of wood chips is sourced from a British Retail Consortium certified supplier meaning that their quality as a product meant for food smoking is absolutely assured. They come from PEFC-Certified sustainable sources in the UK, US and Europe. A further plus point is that the chips’ angular shapes encourage a healthy airflow and, consequently, burn far better than shavings.
The chips can be used to create hot smoke in dedicated food smokers or in simple stovetop smokers. They can also be sprinkled on to barbecue coals, just as they come, towards the end of cooking or pre-soaked so they smoke slowly, right through the cooking process.
Another way to use them is in The Smoking Gun™, a cold smoker that adds fantastic flavour without cooking because the smoke is cooled as it passes through a tube attached to the gun. This means foods like cheese, chocolate, oil (and many more) can be successfully smoked. It’s also great for flavouring cocktails or whiskey.
The various woods used each have different flavour notes:
- Spiced Oak – strong smoky oak flavours with the punch of mixed spice new flavour
- Cabernet Barrel Oak – strong smoky flavour with rich wine notes
- Chestnut – sweet, intense and relatively strong
- Oak – heavy smoky flavour
- Whiskey Soaked Oak – robust oak wood smoke flavour plus a kick of whisky
- Hickory – a sweet and savoury taste
- Mesquite – very strong, earthy flavour
- Maple – mild, sweetish flavour, perfect for lightly flavoured foods
- Apple Wood – mild flavour with sweet, fruity overtones
- Alder Wood – delicate, smoky flavour with just a hint of sweetness
- Ash – distinctive, light flavour
- Cherry Wood – rich, smooth flavour, slightly sweet and fruity
- Bourbon Soaked Oak – infuses gentle bourbon flavour into food on the back of strong oak
- Beech – medium strength flavour making it a good all-rounder
