GongGong: opening 19 May 2014, Gong is designed by renowned interior designer, Andre Fu. London’s highest destination bar takes its name from ‘dougong’ – an ancient Chinese structural element of interlocking wooden brackets, used to support historical Chinese temples and palaces, and a strong component of the bar’s intriguing interior. Cinnabar red lacquer panels, mauve bespoke carpets and a wall of antique bronze cabinets create contrasting Chinese-style textures, whilst a series of intimate chambers – created to work with the unique architecture of The Shard – take guests on a mythical journey through the bar.
An unrivalled setting for sundowners and late-night drinks, Gŏng features a stunning champagne bar and cocktail bar, as well as, a dramatic infinity skypool, which will open for the summer. In keeping with the hotel’s emphasis on local produce, many of the bar’s spirits are sourced from top quality London-based distilleries including Kamm & Sons Ginseng spirit from Highbury, Dodd’s Gin from Battersea and Sacred Gin from Highgate.
Head bartender, Henning Neufeld has crafted a seasonally inspired cocktail list which includes signatures such as ‘The Big Smoke’ – Dodd’s gin, Grand Marnier, Tio Pepe, Mancino Rosso Amaranto and orange bitters; ‘Black and Blue Swizzle’ – Talisker, honey, lime, PX sherry and blue cheese; and ‘Bermondsey Bubbles’ – Jensen’s dry Bermondsey gin alongside rose liqueur, creole bitters and champagne and finished with a sugar shard.
