This spring restaurateur and entrepreneur Tom Conran, in collaboration with talented chef Tom Straker, will launch New Tom’s in Notting Hill. Located on the former site of Tom’s Deli at the fashionable end of Westbourne Grove, the 12 month pop-up will serve avant-garde modern cuisine in a relaxed and friendly bistro style setting.

Head chef Tom Straker trained at the Dorchester and with Heston Blumenthal at Dinner, and will use ultra-modern cooking techniques to produce an original menu serving breakfast, brunch and lunch dishes. Many of the ingredients used will be sourced from his family farm in Herefordshire. New Tom’s has a smoker in the garden for smoking food such as salmon, tomatoes, salt and even water.

Brakfast

Breakfasts dishes include: scrambled hens eggs, treacle cured bacon, cavolo nero and grilled sourdough; slow cooked duck eggs with mushroom duxelle, parmesan, bacon, onion brioche and Jersey rock oysters with bloody mary shots.

Healthy juices and smoothies change on a daily basis, with signature drinks such as the Green Giant, a detoxifying blend of spinach, kale, cucumber, apple, romaine lettuce and spirulina.

Lunch

Straker has created an innovative lunchtime menu, fusing both the modern and the classic.

Diners can enjoy dishes such as: white onion soup with crispy onions, basil and ricotta; Israeli couscous, cumin, roasted broccoli, burrata, with a confit lemon and basil dressing and veal short rib ravioli with root vegetable and pancetta broth.

Desserts include silver dollar doughnuts with salted caramel cream and rhubarb compote, sweet cheese parfait with granny smith apple and candied walnuts and chocolate mousse with lemon gel and honeycomb.

Interior

New Tom’s floor to ceiling windows flood the welcoming space with bright natural light. Tom Conran’s celebrated father, Sir Terence Conran, has loaned him original works by British pop artists, Eduardo Paolozzi, David Hockney, Richard Smith and Patrick Caufield, which adorn the walls.

The addition of a long bar with blue leather padded diner stools, is a great place to stop and sample the new food and vibes at New Tom’s. The playful interior also has a series of 1930’s Parisian metro booth seats running along the wall on the upper level.

In the entrance, in a homage to the old shop, New Tom’s retains a traditional British sweet shop, above which a beautiful raised rotunda features a renaissance mural that depicts an Italian Madonna surrounded by a cornucopia of earthly delights depicting labour and love.

Tom Conran, who formerly had Tom’s Deli on the same site for 24 years and has lived in Notting Hill for over thirty years, says of the new project:

“Tom Straker and I are doing something pioneering here at New Tom’s taking sophisticated modern cuisine out of the usual formal restaurant environment and placing it in a fresh friendly and relaxed setting. Our kitchen will use honed techniques, craft and artistry to create exquisite modern renditions of timeless classics. We’ve done it all with a real sense of fun and hope that the neighbourhood takes it to its heart.”
