Ingredients
- Galia melon
- Honeydew melon
- Cantaloupe melon
- Mascarpone cheese
- Home made basil oil
- Rocket
- Micro coriander
Method
- Peel all 3 types of melon, cut in half, de-seed, and slice thinly
- Blend basil oil in a Thermomix (Basil, olive oil, salt, pepper) Blend together until a deep rich green colour is achieved. Strain through a fine sieve.
- Arrange melon in a circle shape, layering a different type of melon as you go up
- Take a small plush of rocket and place inside the melon circle
- With a hot tea spoon make a small quenelle with the crème fraiche and place carefully on top of the rocket
- Drizzle basil oil around the plate and a small bit over the rocket and mascarpone
- Garnish with micro coriander
