By James Russell: Trio of melon, mascarpone cheese, basil oil – A nice quick and simple refreshing summer dish

Ingredients

  • Galia melon
  • Honeydew melon
  • Cantaloupe melon
  • Mascarpone cheese
  • Home made basil oil
  • Rocket
  • Micro coriander

Method

  1. Peel all 3 types of melon, cut in half, de-seed, and slice thinly
  2. Blend basil oil in a Thermomix (Basil, olive oil, salt, pepper) Blend together until a deep rich green colour is achieved. Strain through a fine sieve.
  3. Arrange melon in a circle shape, layering a different type of melon as you go up
  4. Take a small plush of rocket and place inside the melon circle
  5. With a hot tea spoon make a small quenelle with the crème fraiche and place carefully on top of the rocket
  6. Drizzle basil oil around the plate and a small bit over the rocket and mascarpone
  7. Garnish with micro coriander
