Albert Roux OBE, KFO has revealed the selected menus for Wimbledon champion Andy Murray’s new luxury hotel. Re-opening in April 2014, the Chez Roux restaurant at Cromlix will offer guests a choice of five menus including a private dining, a la carte, daily set menu, lounge menu and afternoon tea menu.

The five menus were developed following a series of tasting events held in January which offered a unique opportunity to help shape the menu of Albert Roux’s newest Chez Roux restaurant.

Mr Roux said: “The Cromlix team and I received excellent feedback at the lunch and dinner events. The comments from the tasters were vital in shaping and perfecting the menus for Cromlix.

“I am extremely excited about opening my newest Chez Roux restaurant and strongly believe that this will be one of the best restaurants in Scotland.”

The a la carte menu offers a range of dishes such as Albert Roux’s twice baked cheese soufflé in cream, Carinhill Farm fillet of beef and warm chocolate tart with hazelnut ice cream. All dishes will use locally sourced produce where possible.

A variety of three course private dining menus will be available priced from £25 to £80 per person. The restaurant will also serve daily set lunch and dinner menus priced from £26.50 per person.

Executive Head Chef Darin Campbell

The Chez Roux restaurant will be run by award-winning Executive Head Chef Darin Campbell who is joining from the renowned One Devonshire Gardens restaurant at Hotel Du Vin in Glasgow, where he held the same title.

From Doune, Perthshire, Darin has worked at a number of leading restaurants during a 24-year career, including Ballachulish House Hotel, Argyll, which won a Michelin Star while he was Head Chef and Petrus, in London, owned by Gordon Ramsay.  He also worked as Head Chef at Restaurant Andrew Fairlie at Gleneagles, which holds two Michelin Stars and four AA Rosettes.

Cromlix

Purchased in February 2013, the hotel is currently undergoing extensive refurbishment to re-establish Cromlix as a leading luxury destination that will create up to 40 new local jobs.

The hotel is being managed on behalf of Andy Murray by Inverlochy Castle Management International (ICMI). Norbert Lieder, ICMI’s Managing Director, said: “Cromlix will be one of Scotland’s leading luxury hotels and Chez Roux will be among the best restaurants in the area.

“Chez Roux’s very reasonably priced menu will be aimed at people from the local area attracting diners from Dunblane and Stirling, as achieved by the brand elsewhere in Scotland.”

The hotel will boast five suites and ten bedrooms, a gate lodge, a chapel, reception hall, two drawing rooms, conservatory, library and meeting rooms.

ICMI already manage eight other renowned independent properties around Scotland, including Inverlochy Castle, near Fort William, Greywalls Hotel in Gullane and The Atholl, in Edinburgh. ICMI’s group of industry experts includes Albert Roux OBE, KFO, owner of Le Gavroche in London, the first UK restaurant to be awarded three Michelin stars.
