Ingredients for 1
- 1 egg
- 2 slices of crusty sour dough bread
- 30 g Philadelphia Light
- 15 g fresh baby spinach
Instructions
- Poach the egg in a saucepan of simmering water for 2-3 minutes.
- Meanwhile lightly toast the bread slices and spread with the Philly. Scatter the spinach leaves over one of the slices of toast and add the poached egg.
- Season to taste with salt and pepper and top with the remaining slice of toast.
