Mark Jordan’s delicious asparagus recipe is an exceptionally versatile dish–making a delightful breakfast or brunch, spectacular starter or a light lunch. If making these asparagus spears for a vegetarian, skip the Parmesan (which has animal rennet) and instead use a vegetarian substitute.
