Each season, Bruno Loubet invites a different collaborator to host a one-off feast at Grain Store which explores and celebrates that season. This Winter, Bruno is focusing on some very special food producers.
First up is the Butter Viking, Patrik Johansson, joining Bruno from Sweden. Those lucky enough to hear him speak at Mad Camp were enthralled and entertained by his mad passion for the butteriest butter and this special meal will be the first time for many to try not only his Virgin butter (made famous by Noma) but also The Kings Butter and even his Rancid Butter!
Joining Patrik as Bruno’s Winter Feast collaborator is Frank Hederman of Belvelly Smoke House, Ireland. Frank’s is the only authentic timber smoke house in Ireland and the fish he smokes is the best Bruno has ever tasted. He doesn’t stop at fish though; smoked cheese, smoked muscles, smoked butter….

Grain Store opened in June 2013 to wide acclaim and explores a different side to Bruno’s skill and passion. There are no geographical boundaries to the influences that have inspired the eclectic menu – they are a culmination of Bruno’s extensive travels and the years dedicated to his beloved vegetable patch. Although many dishes have a meat or fish element, the menu gives vegetables equal billing, if not the starring role. Fermented, sprouting, pickled and smoked ingredients feature alongside the fresh and the seasonal. Flavour above all else is king.
