Award-winning Scottish chef Darin Campbell is to take charge of the kitchens at Andy Murray’s new luxury hotel in Perthshire.

Darin joins as Executive Head Chef from the renowned One Devonshire Gardens restaurant at the Hotel Dun VIN in Glasgow, where he held the same title.

Originally from Doune, Perthshire, he has worked at a number of leading restaurants during a 24-year career, including Ballachulish House Hotel, Argyll, which won a Michelin Star while he was Head Chef and Petrus, in London, owned by Gordon Ramsay.  He also worked as Head Chef at Restaurant Andrew Fairllie at Gleneagles, which holds two Michelin Stars and four AA Rosettes.

Cromlix House

Purchased in February and scheduled to open next spring, Cromlix is currently undergoing extensive refurbishment to re-establish it as a leading luxury destination that will create up to 40 new local jobs.

The hotel will feature a Chez Roux restaurant offering locally sourced produce and dishes created by Darin and his team of chefs.  Chez Roux’s very reasonably priced menu will be aimed at people from the local area, attracting diners from Dunblane and Stirling, as achieved by the brand elsewhere in Scotland.

Cromlix is being managed on behalf of Andy by Inverlochy Castle Management International (ICMI).  The company already manage eight other renowned independent properties around Scotland, including Inverlochy Castle, near Fort William, Greywalls Hotel in Gullane and The Atholl, in Edinburgh. ICMI’s group of industry experts includes Albert Roux OBE, KFO, owner of Le Gavroche in London, the first UK restaurant to be awarded three Michelin stars.

Commenting on Darin’s appointment, Mr Roux said:  “Darin is a local boy, with impeccable credentials.  He was with my dear friend Andrew Fairlie and comes to us very highly recommended.

“The menu will reflect the Executive Head Chef.  I will work closely with him, but I will not write the menu. We hope the majority of our kitchen staff will be Scottish as is the case in our other establishments here.  Providing jobs and training for the local community is very important to us.”
