Philadelphia Recipe, Citrus Mango Cheesecake Baskets

Ingredients for 6

  • 200 g Philadelphia Original
  • Finely grated zest and juice of 1 lemon
  • Finely grated zest of 1 lime
  • 60 g caster sugar
  • 150 ml soured cream
  • 6 ready-made brandy snap baskets
  • 1 ripe mango peeled and thinly sliced

Instructions

  1. Whisk together the Philly, lemon and lime zests and the sugar. Then gradually whisk in the lemon juice.
  2. Fold the soured cream into the cheesecake mixture and spoon into the brandy snap baskets. Arrange the mango slices over the top of the cheesecakes. Serve immediately.
