In the last decade there has been a resurgence of high profile and celebrity chefs being employed by or taking space in hotel locations. The re-emergence of the hotel as a dining destination has catapulted the UK back onto the international gastronomy scene, comparable with what has happened in the United States, France and Japan.
The bar began to be set at new heights throughout the mid-Nineties with the arrival of the likes of Gordon Ramsey, Marco Pierre White and Marcus Wareing into high profile hotel locations. Now, international gastronomy superstars, including Wolfgang Puck, Pierre Koffmann, Alain Ducasse, Heston Blumenthal, Daniel Boulud, Hélène Darroze, Theo Randall and Bruno Loubet to name but a few, are commonplace in hotel locations throughout the UK. In fact, in the Sunday Times Food List of 2012, ten of the top 25 restaurants in the country were located in hotels.
So where does this leave hotel marketers when it comes to promoting the hotel’s Food & Beverage offering? What proportion of time and budget should they be allocating? Does the hotel marketing team even get a look in when superstar chefs often come with an entourage of agents, publicists and marketing machines of their own?
