Tom Kerridge, the only British chef who has earned two Michelin stars by cooking in a pub, begins his new series Proper Pub Food – where he shows us how to cook dishes inspired by British pub classics – on Monday 23 September.
In the first episode, Tom demonstrates dishes that are perfect for serving up to groups of friends. This is hearty, casual cooking which is meant for sharing, meaning less time fussing in the kitchen and more time spent tucking in to great food with your mates.
Beginning with a simple slow cooked shoulder of lamb that melts in the mouth, and some mussels in ale cooked up for a barbecue night at Tom’s local brewery, he moves on to a salt beef bagel inspired by a trip to a salt beef and pastrami stand at Maltby Street market, a hearty pollack, chorizo and chickpea stew, and a creamy plum fool.
Tom will also be visiting some of his favourite suppliers and pubs, giving some great tips on how to source and get the most out of some fantastic British produce.
The series may be aimed at the general public, but is likely to be watched by many in the hospitality industry!
