Philadelphia Recipe, Philly Frittata

Ingredients for 2

  • 0.5 tbsp oil
  • 6-7 small cooked new potatoes, diced
  • 2 spring onions, chopped
  • 0.5 red pepper, diced
  • 0.5 cooked chicken breast, diced
  • 2 tbsp fresh or frozen peas
  • 3 eggs, lightly beaten
  • 60 g Philadelphia Light with Chives

Instructions

  1. Heat the oil in a small frying pan. Toss in the potatoes, veg and chicken. Fry for 3-4 mins, until warmed through.
  2. Pour in the eggs. Cook for a few minutes until the base is set and lightly browned.
  3. Dot the Philly across the top and pop under the grill until golden.
