Ingredients for 2
- 0.5 tbsp oil
- 6-7 small cooked new potatoes, diced
- 2 spring onions, chopped
- 0.5 red pepper, diced
- 0.5 cooked chicken breast, diced
- 2 tbsp fresh or frozen peas
- 3 eggs, lightly beaten
- 60 g Philadelphia Light with Chives
Instructions
- Heat the oil in a small frying pan. Toss in the potatoes, veg and chicken. Fry for 3-4 mins, until warmed through.
- Pour in the eggs. Cook for a few minutes until the base is set and lightly browned.
- Dot the Philly across the top and pop under the grill until golden.
