The Perthshire Highlands are set for an exciting addition in May 2013, when Fonab Castle Hotel in Pitlochry opens its doors.
A five star (grading pending), traditional castle hotel, Fonab is nestled on the banks of Loch Faskally amidst breath taking highland scenery. The hotel will have a total of 26 rooms housed in the castle as well as in a tasteful modern annex. Most of the modern rooms boast direct access to the lochside.
The Hotel will also feature eight rustic, yet luxurious lodges and have private hot tubs within its extensive grounds. More lodges are planned for the future.
Originally built for the Sandeman family, the port and sherry merchants, the hotel is aiming at five star level and will feature a panoramic, glass fronted restaurant with stunning loch views, serving delicious, locally and internationally inspired dishes in a stylish, yet casual setting.
Additional facilities include heated and air-conditioned dog kennels, and a destination spa – complete with treatment rooms, gym and pool – all set to open later in 2013.
Award-winning General Manager appointed
Peter Sim joins from Maryculter House Hotel in Aberdeen, and has previously headed up the team at Dunalastair Hotel in Perthshire and the Cuillin Hills Hotel on the Isle of Skye. His hospitality career spans nearly 25 years, during which he worked in England and Scotland.
Fonab Castle Hotel owner Joanne Clark said: “Peter brings a wealth of authentic Scottish hospitality experience to Fonab Castle as well as a great knowledge of Perthshire which will allow him to put the hotel firmly on the map of luxury destinations in Scotland.
“Our next step is to appoint the right head chef to lead our kitchen team. We are looking for someone with a real passion for fresh Scottish produce who can create an inspiring and delicious menu.”
During his time on the Isle of Skye, Peter Sim created a dedicated single malt bar at the Cuillin Hills Hotel as an embassy of Scottish tourism initiative ScotlandWhisky, and he currently plans to establish Fonab Castle as a must-visit destination for conoisseurs of single malt Scotch.
