By James Russell: 77% of managed pub food sales driven by British dishes…but for how long?

The Pub Food Report developed by food and drink consultancy firm CGA Strategy reveals that traditional British cuisine is still the firm favourite in pubs, with 77% of managed pub food sales driven by British dishes.  A further 12% was driven by sales of US-originated meals, and of the remaining 11%, Italy, France and India claim the biggest share.

However, on average, it is in the lower quality outlets where British cuisine dominates with 83% of all food sales, compared to 73% within better quality outlets.

CGA Strategy’s Scott Elliott commented:

“Traditionally, British pub food has a reputation for being pretty unadventurous and this narrative is becoming rapidly outdated.  Whilst our national food does clearly dominate sales, nearly 25% of all Managed Pub food sales now come from international dishes.

“This trend is only set to continue as the modern consumer’s expectation and interest in world cuisine is matched with ambitious menu design, savvy purchasing and even better delivery standards from operators looking to meet this demand.”

The Pub Food Report

This data has been produced as part of the Pub Food Report developed by food and drink consultancy firm CGA Strategy.  The report findings are based on a combination of data sources, including daily sales data for over 5,000 managed pubs, 8 years of trended menu analysis from over 1,000 pubs and restaurants and total market estimations driven by anonymised sales data from a pool of over 69,000 licensed venues across 18 operating companies representing 70 retail brands.  This massive and unique data set is all contextualised through market-leading on trade expertise.
