A Panini is a great dish to put on a snack or light lunch menu, it takes little time to prepare and the Philadelphia binds all the tasty ingredients together to make the perfect most Panini.

Ingredients
• 8 rashers of streaky bacon
• 300 g cooked chicken breasts or legs, shredded
• 2 spring onions
• 75 g Philadelphia Light
• 1 tbsp wholegrain mustard
• 1 tbsp American sweet mustard
• 4 panins
• 2 large beef tomatoes
• 12 leaves ripped basil
• seasoning to taste
• 1 lemon (juice of)
Instructions
• Preheat the oven to190 °C. Lay the bacon on a non stick tray and bake until crispy. Around 6-8 minutes. Once cooked, leave to cool on absorbent pepper to remove any excess fat.
• Once cooled, break the bacon up into a small pieces and place in a bowl. Mix with the shredded chicken, sliced spring onions, Philadelphia, and the whole grain and American mustard.
• Slice the panini in half and spread the filling on the bottom half. Lay 3-4 slices of the beef tomato on top, then several basil leaves and finally season with salt and pepper if desired. Place the top half onto the panini and cook in a panini grill for 2-3 minutes. Serve hot.
