Patty&Bun joins burger restaurant scene

By James Russell: Patty&Bun joins burger restaurant scene

December 4, 2012

Patty&Bun  – one of London’s hottest new burger joints – has opened its first ever 30 cover restaurant in Central London, taking a change from its regular pop up residencies at the Doodle Bar in Battersea and Endurance Pub in Soho.

Burger entrepreneur Joe Grossmann, founder of the roving pop up ‘Patty&Bun’ has transformed the former Stockpot site in St. Christopher’s Place, Mayfair, into a “cool vibing, individual little joint”, with seating to accommodate up to 30 people as well as limited outside seating. It will run a ‘no reservations’ policy and will also be taking orders for takeaway.

Patty&Bun became a regular pop up and took various London residencies in order to build up the brand and create product awareness. With help from Mark Jankel (founder of Street Kitchen, the iconic British street food operators), they developed all of their products with the simple ethos of doing a few things well:

“Simplicity and quality is the heart of everything we do. The pop ups went down really well and were great for honing and refining the products. Using the pop ups as a platform to getting a small burger joint off the ground was always the plan!”

The provenance of the ingredients is essential to Patty&Bun. They use the freshest and tastiest ingredients that they can find, and the best of British wherever possible. Joe says:

“It took a long time to get to a blend of patty that knocked our socks off. People think it’s very easy to do something very simple well, but it isn’t, it takes time and is constantly evolving! We produced a propriety mix with HG Walter, that is just pure Rock N’ Roll, using grass fed Aberdeen Angus, the Patties contain a majority of 35 day aged off cuts and are made up fresh every day.”

Menu: classics plus…

The menu will be in keeping with the pop up’s simplicity, quality and value which is kept at the heart of everything they do; with classics such as the ‘Ari Gold’ Cheese Burger with their propriety P&B smoked grained mustard mayo (an in ‘n out style umami thousand island mayo concoction), Smokey Robinson with its slowly reduced caramelised onions and mounds of maple cured smoked streaky bacon, Jose Jose chilli burger and skin on triple cooked chips with rosemary salt all featuring. There will also be some new additions such as a lamb burger with cumin aioli along with a few other saucy little treats. The Drinks menu comes with the same ethos as the food; small and focused. Rum N’ Ting, Ice-cold Red Stripes, selection of Reds and Whites and even a Badboy Bottled Rum Punch.

The decor

The aim of the new Patty&Bun pitch up is not to create a contrived branded space but to provide its community with an independent, slightly raw charm alongside the highest quality of burger dining. Designers, Spring and Mercer have been key in collaborating with Joe in the creation of the branding and interior design. Focussing on a shabby chic interior; think old school wall pendants, timber benches and general jovial good times! They have also had some fun with the décor, using an urban street artist named ‘Mr Dane’ to create tongue in cheek burger comic sketches on the walls and even in the toilets!
