In a further demonstration of its commitment to training, Carluccio’s has invested £250,000 in launching a brand new state-of-the-art Training Academy, situated above its Upper Street restaurant in Islington.
The Academy includes video-linked classrooms and a training kitchen able to accommodate up to 12 chefs at any one time. Internet-based video technology allows courses and modules to be broadcast direct to Carluccio’s restaurants both at home and abroad so other team members can watch the training sessions live.
The Academy is the latest development in Carluccio’s intensive chef training programme, which includes ‘Scoula Per Cuochi’ – an intensive 14 week NVQ certified course at Westminster Kingsway College for 36 junior chefs each year. Every year, head chefs also spend three weeks visiting the ICIF (Italian Culinary Institute for Foreigners) chefs’ school in Piedmonte, Italy.

Carluccio’s currently operates 67 restaurants in the UK and seven restaurants internationally, having first launched in 1999.
