Chris Norfolk’s  31 Day Matured Steak Burger with Stilton & Jalapenos was recently judged Britain’s Favourite Burger after impressing both the voting public and the judges:  MasterChef winner Tim Anderson, and chefs from 3663 and Heinz.

The winning burger is already a ‘menu staple’ at The Elm Tree pub, Elmton in Derbyshire, selling up to 60 covers a week, and Chris said of his win:

“It is absolutely fantastic to have won this award. We are a tiny little pub in a small village and this is really going to boost our profile around the local area. Our main point of difference is that we butcher all of our own meat right here at the pub. This recipe calls for the meat from a rack of ribs and we get through up to four a week. We will definitely be entering again next year and might even submit something a little more adventurous – pigeon, rabbit or pheasant burger anyone?”

For those of you who think Derbyshire is a long way to travel, here’s the winning recipe to try for yourselves!

Britain’s Favourite Burger: 31 Day Matured Steak Burger with Stilton & Jalapenos

Ingredients:

1 x 31 day matured full sirloin

2 x red onions

2 x dessert spoons of cracked grain mustard

Half a bunch of curly parsley

1 x dessert spoon of tomato ketchup

Salt & pepper to taste

5 x jalapenos

A good chunk of Stilton

Directions:

Remove all the rib meat and trimmings from the Sirloin & Fillet Fail including the chain. Pulse in a food processor for 30 seconds, you will have to then pick through the meat to remove any excess fat. Dice the red onion and add all other ingredients to the mix.

Shape the burgers by hand and a pastry ring so they are round in shape. The burgers should be around 9 oz.  Leave in the fridge until needed to set a little.

Seal the burger on both sides on a hot griddle or in a frying pan until golden brown on each side; this should take around 2 minutes.  Place the burger in a hot oven top shelf for 25 minutes.  Toast the burger bun.  Add jalapenos to the burger once cooked. Add the Stilton and grill until the cheese melts and holds all your jalapenos to the burger.
