Arriving perfectly in time for Chip Week is a delicious Fish and Chips recipe from Josh Eggleton, served with a divine lemon tartare sauce, mayonnaise and crushed peas. Josh Eggleton is Head Chef at The Pony and Trap pub which is situated just outside of Bristol and is one of only a handful of pubs to hold a coveted Michelin star.

The beauty of Josh Eggleton’s cuisine is that it is both simple and elegant, traditional yet innovative. In this recipe he double cooks the chips to ensure they crisp on the outside and stay fluffy in the centre; try it for yourself.
