How to make iced teas

Iced teas are made by infusing double the usual amount of tea in hot water, adding sugar to taste, then leaving to cool. Iced tea is best served in tall glasses poured over crushed ice and dressed with a sprig of garnish to reflect the tea’s properties – such as mint, spearmint or slices of strawberry.
